Brazilian Cheese Puffs with Chorizo

This has got to be one of the tastiest snacks you can prepare and such an easy Thermomix recipe. I make Brazilian cheese puffs all the time and find new variations to make them more exciting and interesting wherever I can. This one is particularly tasty because it involves chorizo crumble and a piece of chorizo in the center. You could easily leave out the chorizo in the middle and just do the crumble but I think it adds an extra kick. 

Ingredients

  • 150 g chorizo sausage
  • 100 g Mature cheddar in small chunks
  • 150 g whole milk
  • 50 g vegetable oil
  • 1 large egg
  • 170 g arrowroot flour or tapioca flour
  • 1 tsp sea salt
  • 20 g chives chopped

Instructions

  1. Preheat the oven to 220C / 200C Fan / Gas Mark 7. Grease a small 24-hole muffin tin and set aside. 

  2. Place 100g chorizo in the mixing bowl and chop 5 Sec. / Speed 7. Heat a non-stick frying pan with a little oil and fry the crumbled chorizo until browned. Transfer into a small bowl and set aside. 

  3. Cut the remaining chorizo into 24 slices. Set aside. 

  4. Place the cheese in the mixing bowl. Chop 10 Sec. / Speed 9. Remove about 2 Tbsp for sprinkling. Set aside Add the milk, vegetable oil, egg, arrowroot (or tapioca) flour, salt and chives and 1/2 of the fried chorizo. Blitz 25 Sec. / Speed 8

  5. Fill each muffin hole 3/4 with the batter and drop 1 slice of chorizo in each hole. Sprinkle with the reserved grated cheese. Bake for 10-15 minutes until puffed up and golden. Remove and leave in the tin for a couple of minutes, then serve warm, sprinkled with the remaining chorizo crumble.

    These are absolutely delicious!!! The kids devoured them! (You can use a milder salami if Chorizo is too spicy for your little ones.)

    It is beautiful, but no: you can not substitute tapioca otherwise it will be no longer a Brazilian cheese bread.
    More than it: we would never use cheddar, Parmesan yes. Cheddar not at all.
    And we also use tapioca flour plus fermented tapioca to make it more crispy.

      Well, we all like substitutes to be able to achieve recipes so I suggest them. If we therefore cannot call them “Brazilian cheese puffs” anymore I’ll call them a “Fluffy cheese puff instead” which also applies to the cheese 🙂

    I only have a 12 hole muffin case – how long should I cook them as they will be.a bit larger? I tried for 15 mins but they were very chewy so not sure whether it wasn’t long enough?
