Banana Pikelets with Caramel Sauce
When I made these I had a huge fail at first. I thought I would make jam filled pikelets. Little did I know that nothing was going to work out. And I am so glad it didn't because I took a moment and thought what else I could do with this lovely pancake mixture. So I sliced up a banana and fried each slice first, topping it with some Pikelets mixture, making banana pikelets. But something was missing. Of course, it had to be caramel sauce. It was a breakfast that Jesse will remember forever. I don't think I have seen him ever eating so fast. This is truly an amazing Thermomix recipe that the whole family will love.
You can make the caramel sauce ahead and keep it refrigerated for up to 1 week. I make really good use of my incredible Thermi Servebowls when whipping these up. I use one bowl to keep the caramel sauce warm and another bowl to keep the pikelets warm while frying the rest. Perfect breakfast at the right temperature.
- 185 g milk
- 200 g plain flour
- 1 large egg
- 20 g caster sugar
- 2 tsp baking powder
- 20 g unsalted butter in small chunks
- 2 bananas
- 125 g unsalted butter in small chunks
- 250 g brown sugar
- 125 g double cream (or thickened cream)
- 1 banana
- 50 g Greek style yoghurt
To make the Pikelets, place the milk, plain flour, egg, caster sugar, and baking powder in the mixing bowl. Combine 20 Sec. / Speed 4. Scrape down using a spatula.
Heat a large non-stick frying pan to medium heat and melt the butter. Once melted, pour into the mixing bowl and combine again 10 Sec. / Speed 4.
Pour the mixture into a jug. Clean the mixing bowl.
To make the caramel sauce, place the butter, brown sugar and double cream in the mixing bowl. Heat 7 Min. / Varoma / Speed 2 / no measuring cup. Pour into a Thermi Servebowl and keep warm until serving the Pikelets.
To fry the pikelets, heat up the non-stick frying pan to medium heat and slice the bananas into 2cm thick slices. Place 4 slices of banana in the pan, leaving plenty of space between each slice. Place a dollop of Pikelets mixture on top of each banana slice and fry the Pikelets on medium heat for about 1 minute on each side. Remove and place in another Thermi Servebowl until all pikelets are ready to be served. Repeat with the bananas and Pikelets mixture until finished.
To serve, slice up another banana, take a Pikelets, decorate with some Greek yoghurt and banana slices and pour over some caramel sauce.
