Breakfast is the most important meal of the day for anyone. I love how fast I can whip up a batch of these tasty chorizo breakfast muffins. They are the perfect Thermomix breakfast recipe and you can easily steam them or bake them. I find steamed they keep a bit fresher for longer whereas baked they get that lovely, smokey flavour. 

I use my awesome silicone muffin moulds but you could also use a traditional muffin tin if you are baking them. Instead of chorizo you can also use cubed bacon or pieces of smoked mackerel for a meatless version. To make it a veggie only bake, add some tomato pieces instead. They make the perfect lunchbox treat for the kids. 

Ingredients

  • 20 g butter for greasing
  • 75 g mature cheddar in small chunks
  • 1 courgette in 4cm chunks
  • 4 spring onions in small chunks
  • 120 g chorizo sausage in 3cm chunks
  • 10 large eggs
  • 1 pinch sea salt
  • 1/2 tsp black pepper
  • 1000 g water

Instructions

  1. Grease 2x 7-hole silicone muffin moulds with butter and set aside.

  2. If you want to bake these muffins instead of steaming them, preheat the oven to 220C. 

  3. Place the cheddar in the mixing bowl. Chop 5 Sec. / Speed 9. Transfer into a small bowl. Set aside. 

  4. Add the courgette to the mixing bowl. Chop 2 Sec. / Speed 5. Transfer into the bowl with the cheddar and set aside. 

  5. Place the spring onions in the mixing bowl. Chop 3 Sec. / Speed 5. Transfer into the bowl with the chopped veggies and set aside. 

  6. Place the chorizo in the mixing bowl. Chop 2 Sec. / Speed 8. Transfer into the bowl with the chopped veggies. Set aside. 

  7. Add the eggs, salt and pepper to the mixing bowl. Blitz 20 Sec. / Speed 4. Add all the chopped vegetables, chorizo and cheese to the bowl and combine 10 Sec. / Speed 2

  8. Divide the mixture evenly between the muffin moulds. Cover the top of each muffin mould with either heat proof cling film or Varoma Teflon papers and insert into the Varoma steaming dish. 

  9. Clean the mixing bowl. Add the water and put the Varoma in place. Steam 25 Min. / Varoma / Speed 2. Remove the cling film or Teflon paper and release the muffins from the mould. Serve hot straight away.

  10. Alternatively, if you are baking the muffins, place the muffin moulds in the preheated oven and bake for 15 minutes until golden brown and baked. Remove from the oven, release from the silicone moulds and serve straight away.
