
Fluffy pancakes with raspberries and bacon
One thing I really like to make on a weekend is fluffy pancakes. Pancakes have to be colourful in my house so I usually top them with fresh seasonal fruit and honey. Though I occasionally had pancakes in Germany, I preferred them the American way. They are the real deal.
Ingredients
For the batter:
- 135 g plain flour
- 130 ml whole milk
- 1 Tbsp caster sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1 large egg
- 2 Tbsp butter melted
To serve:
- Bacon
- Raspberries
- Bananas chopped or sliced
- Honey or maple syrup
Instructions

Place the butter in a large frying pan and melt. Remove from the pan and pour into a small bowl. Use a paper towel to distribute the remaining butter in the pan.

Place all the remaining pancake ingredients in the mixing bowl and mix 1 Min. / Speed 3 until smooth.

Add the melted butter to the mixing bowl and mix again 20 Sec. / Speed 4.

Heat up your large frying pan again. Once hot, place a ladleful of batter into it (the batter will look very thick). Wait until some bubbles begin to appear on the top of the pancake, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm thick. Remove from frying pan.

Repeat until batter is used up. Serve with bacon, fruit and honey.
Recipe Notes
A great variation of this recipe is blueberry pancakes. I simply add one pack of blueberries to the mixture and stir 10 Sec. /Reverse / Speed 2.

Hi Sophia i made these this morning and they turned out very fluffy but the taste of the baking soda was so overwhelming- is it supposed to be 2 tablespoons??
Hi Leoni, Gosh, no that was my mistake. I will get this corrected now. It was supposed to be 1 Tbsp baking powder not soda. That was a typo. I am so sorry. x

I’ve tried this recipe 2 or 3 times now and the baking powder taste is over whelming. I used the updated version. The ratios are way out, even the salt seems high. The batter is very thick. The recipe only makes 8 small pancakes. And definitely not fluffy, sorry.

Hello I have made this batter 1 day before I am going to use it tomorrow and have put it in the fridge ..will it be ok and the outcome be the same ? Thanks !!
Hi, I wouldn’t do that as the baking powder in the mixture will not be active anymore the next day. It is likely to be flat and not taste right as batter will start to ferment. x
