This  Christmas Pizza is the perfect way to use up any leftovers from the big Christmas lunch. 

Super fast recipe for the days in between. After the big Christmas lunch there are always so many leftovers and the question is what to do with them. Nobody wants to chuck any of those lovely roasted veggies or the beautiful beef or turkey that they made, so I came up with a superb idea to make use of most of your leftovers and please the whole family as well. 

Make a leftover Christmas pizza with the help of your Thermomix. This one is particularly tasty and you can vary your toppings however you like. I have given you some options in the method. Wishing you a wonderful Christmas!!!


Christmas Pizza

  • 300 g water
  • 1 Tbsp dry active yeast or 30g fresh yeast
  • 20 g olive oil
  • 500 g strong white bread flour
  • 10 g sea salt flakes


  • 150 g sour cream
  • 1 pinch sea salt flakes
  • a few slices leftover Christmas ham or turkey
  • 5 leftover brussel sprouts or fresh Brussel sprouts, halved
  • 1 red onion peeled and thinly sliced
  • 100 g brie sliced
  • 3 Tbsp cranberry sauce


  1. Place the water, yeast and olive oil in the mixing bowl. Warm 2 Min. / 37°C / Speed 2. Add the strong white bread flour and sea salt flakes and knead 2 Min. / Kneading Function.
  2. Leave to prove in the mixing bowl for 1-2 hours until doubled in size. Tip the dough onto a floured surface, shape into a large rectangle and transfer onto a large baking tray lined with greaseproof paper. Prick with a fork a few times and leave for 10 minutes to relax while preparing the toppings. Instead of making a large sharing pizza, you can also make smaller round pizzas. Simply divide the dough into 300g balls and roll them out into 1cm thick circles.
  3. You can use any leftovers but this version makes use of some leftover cheese, roast ham or turkey and combines it with some leftover veggies. If you prefer to use up some roast beef, you can do that as well or if you have quite bit of roast veggies to use up, just leave out the cranberry sauce and use chopped, tinned tomatoes instead of sour cream as the pizza base.
  4. Spread the sour cream over the pizza, leaving a bit of a border for the crust. Season with the salt and pepper and decorate with the sliced leftover meat. Then evenly distribute the Brussel sprouts on top and dot some red onions, brie and cranberry sauce here ant there until the pizza is nicely topped.
  5. Preheat the oven to 250°C / 230°C Fan / Gas Mark 9. Once hot, place the pizza in the oven and bake for 25-35 minutes until golden brown. Serve immediately with some leftover gravy to dip the crust. Enjoy!
