Feta Sausage Rolls

These Feta Sausage Rolls are the perfect party bite for the whole crowd. Filled with feta and sausage meat, it is so delicious, you will come back for more. 

Snacks are so important at Christmas time, which is why these feta sausage rolls are probably the best snack you can offer your crowd and so easy to prepare with your Thermomix. 

You can serve them hot or cold and make them well in advance. In the instructions you can find some great tips on preparing ahead. If you prefer to make your own puff pastry, I have linked my all time favourite recipe for puff pastry from the blog.


  • 1 onion peeled and halved
  • 2 garlic cloves
  • 20 g olive oil
  • 15 g fresh sage
  • 2 tsp chilli flakes
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 450 g sausage meat or 6 pork sausages, skin removed
  • 200 g feta cheese crumbled
  • 2 packs ready rolled puff pastry or for the homemade version on the link in the intro)
  • 1 egg
  • 1/2 tsp sea salt flakes


  1. Place the onion and garlic clove in the mixing bowl. Blitz 3 Sec. / Speed 5. Scrape down. Add the olive oil and fry 8 Min. / 120°C / Speed 1. Leave to cool in the bowl for 10 minutes.
  2. Then, add the sage, chilli flakes, dried oregano and black pepper and blitz 2 Sec. / Speed 7. Add the sausage meat and feta cheese and combine 10 Sec. / Speed 4. Transfer into a bowl.
  3. Meanwhile, preheat the oven to 200°C / 180°C Fan / Gas Mark 6. Line two large baking trays with greaseproof paper.
  4. Place one piece of puff pastry on a lightly floured surface. Cut in half lengthways. Place 1/4 of the sausage mixture along the length of the pastry rolled into a sausage shape about 2cm wide. 

    Brush the edges with a little egg and then fold over the pastry to encase the filling, leaving a small lip of pastry. Press down slightly, then press a fork into the lip of pastry to make a neat pattern and close it off. 

    Repeat this with the other half of the pastry and the other sheet of puff pastry until everything is used up. You should end up with 4 large pastry rolls.

  5. Chill for 10 minutes, then cut into large sausage rolls or mini sausage rolls, depending on your preference. Brush with egg and place neatly on the prepared baking trays.
  6. Sprinkle with a little salt and chill again for 10 minutes. At this stage, if you are making them ahead, you can leave them in the fridge until the next day when you are baking them or you can freeze them. make sure to brush them with egg just before baking if you decide to make them ahead.
  7. Bake in the oven for 20 minutes until golden brown and fluffy. Remove and leave to rest for a couple of minutes before serving. Enjoy!

    Hi! Wondered how spicy these are and if I should reduce the amount of chilli to make them toddler-suitable?

    Hi, Could i add pumpkin to these? If so how much would you recommend? Any other tips for adding it? Thanks

      I would add a handful, about 50-100g and chop it up first or even steam it in the Varoma for a few minutes before adding. Leave to cool before mixing in.
