Thermomix Nussecken

Thermomix Nussecken aka Flapjacks are a German classic. It means nut corner and is an afternoon tea snack in our region. They are similar to a flapjack, although much more delicate and nutty. On a special occasion my mum and I would make Nussecken together. Normally just before someone’s birthday or if we knew family was coming over. I loved experimenting with the chocolate when I was little and it is also a great way to use up leftover chocolates from Easter and Christmas that have been waiting to be used for ages. My mum has a secret passion for Nussecken and whenever there was a birthday around the corner she would use the opportunity to make them and say to me that there is no birthday without Nussecken. She was the one who would always finish the little crumbs because they were the tastiest. Thermomix Nussecken are the perfect combination of a sweet and crumbly biscuit base, followed by tangy apricot jam and crunchy but soft and wholesome nut mixture, dipped in dark chocolate on its edges.   • 225 g plain flour
  • 75 g corn flour
  • 1 tsp baking powder
  • 1 tsp  vanilla extract
  • 2 eggs
  • 125 g butter
  • 30 g caster sugar


  • 150 g apricot jam
  • 200 g butter
  • 200 g caster sugar
  • ½ teaspoon vanilla extract
  • 6 tablespoons water
  • 400 g ground almonds or hazelnuts
  • 200 g dark chocolate


  1. Preheat your oven to 180°C.
  2. For the biscuit base, place the plain flour, corn flour, baking powder, vanilla extract, eggs, butter and caster sugar in the mixing bowl mix 20 Sec. / Speed 6.
  3. If you don’t have a Thermomix, place the plain flour, corn flour, baking powder, vanilla extract, eggs, butter and caster sugar in a large mixing bowl and, using an electric mixer, mix until crumbly. .
  4. Place the mixture on a rectangular baking tray lined with greaseproof paper and press down evenly. Spread the jam on top.
  5. For the filling, melt the butter and sugar in the mixing bowl until dissolved 2 Min. / 60°C / Speed 3.
  6. If you don’t have a Thermomix, melt sugar and butter in a large saucepan until dissolved.
  7. Add the nuts, vanilla extract and water and combine until you have a smooth batter 15 Sec. / Speed 3.
  8. If you don’t have a Thermomix, add the nuts, vanilla extract and water to the saucepan and stir until combined.
  9. Spread over the apricot jam. Bake in the oven for 45 minutes. Once baked, take out of the oven leave to cool slightly. Then cut into triangles or rectangles, squares or whatever shape you like.
  10. Place the chocolate in the bowl and blitz 7 Sec. / Speed 9. Scrape down, then 3 Min. / 37°C / Speed 2.
  11. If you don’t have a Thermomix, melt the chocolate in a saucepan on the lowest possible heat, stirring constantly, until completely smooth.
  12. Dip the corners of each Nussecken into the chocolate and voila, you have just made some German treats. Enjoy!

    Can I sub the apricot jam for a different flavour (like strawberry?), or does that totally change/ruin it?!

      Of course you can 🙂 whichever flavour you like. It’s just tradition to make it with apricot jam 🙂
