These Thermomix Gluten Free cookies are the perfect little treat without dairy and refined sugar. If you are craving something naughty but healthy, this is the cookie to make. These little Thermomix gluten free cookies are such healthy little treats ideal for the kids to take as lunchbox snacks. You can add some chopped pecan nuts or almonds to get a bit of extra crunch or just use 1/2 white and 1/2 dark chocolate chips to make them double chocolate chip cookies. The best thing is, they only take 10 seconds to prepare. They harden as soon as they cool so don't overbake them. You want soft, chewy cookies.

Ingredients

  • 50 g sorghum flour
  • 50 g potato starch
  • 40 g tapioca flour/starch
  • 1/4 tsp xanthan gum or chia seeds
  • 1 tsp bicarbonate of soda
  • 50 g dark soft brown sugar
  • 50 g margarine plant based
  • 200 g chocolate chips vegan
  • 85 g maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1 tsp black treacle or molasses

Instructions

  1. Preheat the oven to 190°C. Line a large rectangular tray with greaseproof paper.
  2. Place the sorghum flour, potato starch, tapioca flour/starch, xanthan gum or chia seeds, bicarbonate of soda, dark soft brown sugar, margarine, chocolate chips, maple syrup or honey, vanilla extract and black treacle or molasses in the mixing bowl. Mix 10 Sec. / Reverse Speed 5.
  3. If you don't have a Thermomix, place the sorghum flour, potato starch, tapioca flour/starch, xanthan gum or chia seeds, bicarbonate of soda, dark soft brown sugar, margarine, chocolate chips, maple syrup or honey, vanilla extract and black treacle or molasses in a large bowl and mixm using an electric whisk, until combined.
  4. Spoon teaspoons of the mixture onto the prepared tray and bake in the oven for 10-15 minutes. Make sure you leave plenty of space in between each cookie as they will expand a lot during baking. Transfer onto a wire cooling rack and leave to cool. Enjoy!
