This Thermomix Banana Pudding Traybake is full of amazing flavours. There is no need for any extra sauce, because it contains so much moisture. Ideal recipe for a crowd. When you are in search for a super delicious recipe, there is nothing better than finding out you can prepare a dessert for whole crowd in such a short period of time. This Thermomix Banana Pudding Traybake is self-saucing and super delicious after a light meal or when you are still feeling peckish. You can add more bananas or even add in some apple slices. A few chocolate chips would go really well in this dessert too. What's your favourite pudding? I personally love a bit of chocolate or sticky toffee pudding.

Ingredients

Banana Pudding Traybake

  • 100 g butter + extra for greasing
  • 1 banana
  • 275 g plain flour
  • 1 Tbsp baking powder
  • 140 light soft brown sugar
  • 80 pecan nuts
  • 250 g whole milk
  • 3 large eggs
  • 2 Tbsp dark rum or bourbon

Topping and drizzle

  • 3 bananas
  • 160 g light soft brown sugar
  • 300 g boiling water
  • 50 g golden syrup
  • 20 g pecan nuts

Instructions

  1. Preheat the oven to 180°C / 160°C Fan / Gas Mark 4. Grease a rectangular ovenproof dish (about 20x28cm and 4cm deep) with some butter and set aside.
  2. Place the butter in the mixing bowl. Melt 3 Min. / 55°C / Speed 2.
  3. Add 1 banana and mash 10 Sec. / Speed 3. Add the plain flour, baking powder, light soft brown sugar, pecan nuts, whole milk, eggs and rum or bourbon and mix 30 Sec. / Speed 4. Pour into the prepared dish.
  4. Slice the bananas for the topping lengthways and place on top of the pudding. In a clean mixing bowl, place the light soft brown sugar, boiling water and golden syrup and mix 30 Sec. / Speed 3. Pour over the bananas, sprinkle with the pecan nuts and bake in the oven for 45 minutes - 1 hour until golden brown and the top is set. Serve warm. Enjoy!
