Thermomix Banoffee Pie

This Thermomix Banoffee Pie is the perfect combination of pastry, caramel, fruit, cream and chocolate. The ideal recipe for anyone with a sweet tooth. There is not much that is better than a super indulgent dessert after a successful meal. Luckily, this Thermomix banoffee pie combines all of the best elements of dessert making to make one master of a dessert. The super tasty shortcrust pastry is topped with fudgey caramel, followed by banana slices, whipped cream and a few shavings of chocolate. It is so naughty, I am not even sure if I am allowed all those words in one sentence. When you are in a hurry, you could use store bought caramel but it is not the same. This fudge like caramel sets perfectly and makes this an experience that everyone will still talk about months after they had it at yours.

Ingredients

Banoffee Pie

  • 150 g plain flour
  • 3 egg yolks
  • 50 g caster sugar
  • 1 pinch salt
  • 75 g butter
  • ½ tsp vanilla extract

Caramel Filling

  • 200 g white chocolate in small chunks
  • 1 can 395g condensed milk
  • 125 g butter
  • 160 g brown sugar
  • 125 g golden syrup
  • ½ tsp sea salt flakes

Toppings

  • 3 bananas
  • 300 g double cream
  • 100 g dark chocolate in small shavings using a vegetable peeler

Instructions

  1. Preheat the oven to 180°C / 160°C Fan / Gas Mark 4.
  2. Place the plain flour, egg yolks, caster sugar, salt, butter and vanilla extract in the mixing bowl. Mix 20 Sec. / Speed 6. Wrap the pastry in cling film and chill for 30 minutes.
  3. Remove from the cling film and place on a floured surface. Roll out to fit a 22cm tart dish. Line the tart dish with the pastry, prick with a fork and place a sheet of greaseproof paper on top. Fill with baking beans and blind bake for 15 minutes.
  4. Remove the baking beans and greaseproof paper and bake again for another 5 minutes until baked all the way through. Remove and leave to cool.
  5. Meanwhile, to make the fudgey caramel, place the white chocolate in the clean mixing bowl. Blitz 5 Sec. / Speed 9. Pour into a separate bowl until later.
  6. Pour the condensed milk, butter, brown sugar and golden syrup into the mixing bowl. Cook again 20 Min. / Varoma / Speed 3 / No measuring cup.
  7. Add the chopped white chocolate to the mixing bowl and mix 20 Sec. / Speed 4. Pour over the chilled pastry and leave to set at room temperature for at least 4 hours.
  8. Insert the whisk attachment. Pour in the cream and whip on Speed 3 until stiff. This could take anywhere between 20-45 seconds. Keep a very close eye on it. Chop the bananas into slices and decorate over the chilled caramel. Top with the whipped cream and sprinkle over some chocolate shavings. Enjoy!
