Chia Seed Crackers

Chia seed crackers with beetroot hummus

These fragrant chia seed crackers with beetroot hummus make the perfect snack or appetizer. Beetroot is a great root vegetable with superb health benefits. This recipe is also vegan and gluten free. 

Ingredients

For the hummus:

  • 1 can chickpeas
  • 5 Tbsp tahini
  • 2 Tbsp olive oil
  • 150 g cooked beetroot
  • 1 clove garlic
  • ½ tsp salt
  • 1 lemon juice only

For the crackers:

  • ½ cup chia seeds
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds
  • ½ cup sesame seeds
  • 1 cup water
  • 1 large garlic clove finely grated
  • 1 onion grated
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 200°C. Line a baking tray with greaseproof paper. 

  2. Place all the cracker ingredients in the mixing bowl and knead 10 Sec. / Kneading function.

  3. Transfer mixture to the prepared baking tray and spread out evenly. Bake in the oven for 30 minutes. 

  4. Remove from the oven, cut into rectangles and flip each cracker over. Bake for another 20 minutes until golden and crispy. In the meantime, prepare your hummus.

  5. Place all the hummus ingredients in the mixing bowl and blend 10 Sec. / Speed 8. If it appears dry, add more olive oil and tahini. 

  6. Remove crackers from the oven and allow to cool.

  7. Season the hummus to taste and dip away!
