This Egg Masala, or Egg Molee as it is also known,  is a perfect way to use up leftover eggs from the Easter egg hunt.

 It is prepared super quickly using your Thermomix. I love boiled eggs and during Easter time there are always so many leftover after the big Easter egg hunt. 

In Germany we make a thing called 'Grüne Soße' which is essentially green sauce and is made up of the leftover boiled eggs and lots of herbs in a creamy sauce. Nice but this year I thought I would try something new and came up with this super gorgeous egg masala (molee) which is so yummy and so quick to prepare.


  • 2 red onions peeled and halved
  • 30 g fresh ginger in 3cm chunks
  • 30 g Ghee
  • 1 star anise
  • 6 boiled eggs peeled and left whole
  • 1 tsp turmeric
  • 1 tsp kashmiri chilli powder
  • 400 g coconut milk 1 can
  • 1/2 tsp sea salt
  • 1 tsp raw cane sugar or palm sugar
  • 1/2 tsp garam masala
  • 10 g fresh coriander


  1. Place the onions and ginger in the mixing bowl. Blitz 2 Sec. / Speed 7. Scrape down using your spatula and add the Ghee and star anise. Fry 10 Min. / 120°C / Speed 1.
  2. Add the whole eggs, turmeric, Kashmiri chilli powder, coconut milk, sea salt, sugar and garam masala and cook 30 Min. / 100°C / Reverse Speed Stir / No Measuring cup. Instead of the measuring cup, place the simmering basket on top of the mixing bowl to avoid splatters.
  3. Serve immediately sprinkled with some fresh coriander and naan bread or rice. Enjoy!
