This  healthy millionaire's shortbread is a super easy treat to prepare using your Thermomix and such a tasty snack for your lunchbox. No baking required. If you are looking for something 'healthy' that you can whip up in minutes, this  healthy millionaire's shortbread is definitely one to put on the bucket list.

I love millionaire's shortbread but sometimes find it very filling and it takes ages to prepare when made from scratch. This one is so easy and so fast, it was a welcome change from the original. If you like, you can use homemade almond or peanut butter to prepare the recipe or just use a high quality store bought version (but what am I saying you've got a Thermomix, it will be so much faster to whip it up than going to the shops).

  • 110 g coconut flour
  • 150 g maple syrup or rice malt syrup
  • 110 g coconut oil
  • 1 tsp vanilla extract

Caramel Layer

  • 80 g maple syrup or rice malt syrup
  • 50 g coconut oil
  • 60 g peanut or almond butter
  • 1 tsp vanilla extract
  • 1 pinch sea salt flakes

Chocolate Layer

  • 110 g coconut oil
  • 60 g high quality minimum 70% cocoa powder or cacao powder
  • 50 g maple syrup


  1. Line a small loaf tin with cling film.

  2. Place the coconut flour, maple syrup, coconut oil and vanilla extract in the mixing bowl. Combine 10 Sec. / Speed 6. Pour into the prepared tin and spread evenly. Chill.
  3. Add the maple syrup, coconut oil, peanut or almond butter, vanilla extract and sea salt flakes to the mixing bowl. Warm 5 Min. / 90°C / Speed 1. Pour over the chilled shortbread and leave to set for at least 4 hours.
  4. Clean the mixing bowl.
  5. Place the coconut oil, cocoa powder and maple syrup in the mixing bowl. Warm 3 Min. / 55°C / Speed 3. Pour over the chilled caramel and leave to set for at least 2 hours. 
  6. Remove the millionaire's shortbread from the tin and cut into bite sized pieces. You can store them in the fridge for up to 2 weeks. Enjoy!
