Vegan, Gluten-Free Chocolate Cornflakes Clusters

Are you ready for the quickest recipe I have posted so far? These chocolate cornflakes clusters are one of the simplest and quickest snacks you can prepare with the kids in the afternoon. They are great fun and a nice way of making boring cornflakes look much more appealing. "Schokolade macht glücklich" (Sophia's friend) As a child I absolutely loved experimenting with chocolate. There were so many recipes that my mum and I made on the weekend involving chocolate. These chocolate cornflake cakes are one of them. The first time I made them was on my eighth birthday party. My mum had organised this amazing trip to a chocolate factory with all the kids and for the first time we observed how pralines and truffles were produced. It was fascinating. Afterwards we all went back to our house and made some recipes involving chocolate. We had so much fun and all the kids got to take home their chocolate truffles and chocolate clusters afterwards. These birthdays were the best. My mum was so talented at organising themed birthday parties and the chocolate birthday party was by far the best one. My friend Alena and I were quite obsessed with chocolate in school and kept telling each other about the benefits of eating chocolate. Once, she told me about the endorphins that chocolate releases and I was quick to conclude that chocolate obviously must make you happy. This has proven to be so true and up until today I strongly defend this argument. Chocolate cornflakes cakes are so delicious and such a nice little treat with the perfect balance of sweetness and crunch. It can be stored in a jar for up to a week. It is also both, vegan and gluten free.

Ingredients

For the cornflakes:

  • 200 g high quality vegan dark chocolate
  • 150 g gluten free cornflakes

Instructions

  1. Place the chocolate in small chunks in the Thermomix mixing bowl and melt until smooth on setting 4 Min./37°C/Speed 2.
  2. If you don't have a Thermomix, place the chocolate in a small saucepan and melt on very low heat until smooth.
  3. Place the Cornflakes in a separate bowl and pour over the chocolate. Mix until all the cornflakes are well coated. Place small tablespoon sized portions on a baking paper to leave them to dry.
  4. Enjoy with a nice warm cup of milk!

    Ja, daran erinnre ich mich auch noch so gut. Wie ihr Kinder mit Begeisterung Pralinen kreiert habt und stolz den Eltern Eure Schachteln präsentiert habt mit den vielen verschiedenen Konfekten, inclusive dieser herrlichen Schoko-Chrunchies, die Ihr mit mir zusammen in der Küche gezaubert und verpackt habt. Ich möchte am liebsten für einen Moment die Zeit zurückdrehen.
