These apple muffins are prepared in minutes using your Thermomix and taste so amazing. The perfect recipe for the kids or a lazy afternoon.

 I must confess, I am in love with apple cake and whatever shape and form it takes, count me in. To me, apple cake in its thousands of varieties reminds me of home and my grandma. She used to make it for me all the time. This recipe is actually an adaptation of her original apple cake recipe and I simply felt like some 

muffins so instead of spooning it into a cake tin I just spooned it into my muffin tin and placed the apples on top. There are so many more options for these delicious apple muffins. Make it a cake by spreading the mixture into a 20cm round springform tin and decorating the apple slices on top or chop another apple and add to the filling for a moist muffin. You could even add some nuts or raisins and make it a little heavier, perfect for a breakfast bite.


  • 1 apple cox or bramley
  • 1 Tbsp lemon juice
  • 125 g unsalted butter
  • 140 g caster sugar
  • 3 eggs
  • 225 g plain flour
  • 1 Tbsp baking powder
  • 1 pinch salt
  • 75 g whole milk

To decorate

  • 1 Tbsp demerara sugar raw cane sugar
  • 1/2 tsp ground cinnamon


  1. Preheat the oven to 180°C / 160°C Fan . Gas Mark 4. Line a 12-hole muffin tin with cupcake liners or grease with some butter and dust with flour. Set aside.

  2. Slice the apple into thin pieces and drizzle with the lemon juice. Transfer into a bowl and set aside.
  3. To make the batter, place the butter, sugar, eggs, plain flour, baking powder, salt and milk in the mixing bowl. Combine 30 Sec. / Speed 5. Scrape down using a spatula and combine again 10 Sec. / Speed 5.
  4. Divide the mixture evenly between the prepared muffin liners using a spoon and slot a few apple slices into each muffin so that they look out halfway.
  5. Mix the Demerara sugar and cinnamon in a small bowl and using a teaspoon drizzle over the apples.
  6. Bake for 15 minutes until golden brown. Then remove and transfer onto a wire cooling rack. Leave to cool. Enjoy!

    They are yummy. Made some and omitted the extra sugar on top, they were so delicious. I giggled some away to stop me eating them all! They were gratefully received.

      You could use coconut sugar instead 🙂 but not really no sugar at all. It will impact the texture x
