Once the heating goes on in the autumn, I crave warm, comforting foods to make me feel cosy. I find soup is the perfect solution to rainy days and dark evenings. This one is really quick, and perfect for making use of seasonal ingredients in the autumn. 


For the soup:

  • 600 g butternut squash chopped roughly
  • 1 tsp salt
  • pepper salt
  • drizzle of olive oil
  • 10 g fresh thyme
  • 5 cm piece of ginger
  • 1 garlic clove
  • 1 onion quartered
  • 1 litre water
  • 2 vegetable stock cubes
  • ½ teaspoon cayenne pepper
  • ½ teaspoon paprika
  • 300 ml double cream or 1 can coconut milk

To decorate (optional):

  • handful of pistachios chopped finely
  • 1 pomegranate
  • bunch of coriander
  • 25 g greek style yogurt


  1. Preheat your oven to 250°C.
  2. Take a handful of chopped up butternut squash and season with sea salt, pepper, olive oil and thyme. Place in the oven and roast until the soup is ready. 

  3. Place the olive oil, ginger, garlic and onion in the mixing bowl. Chop 5 Sec. / Speed 5 then saute 3 Min. / 100° / Speed 2.

  4. Add the remaining butternut squash and chop 20 Sec. / Speed 5.

  5. Add the water, stock cubes, cayenne pepper and paprika then cook 15 Min. / 100° / Speed 3.

  6. Remove the roasted squash from the oven and place into a serving bowl.

  7. Add the double cream and start pureeing the soup 2 Min. / Speed 5, slowly increasing to speed 9. Season to taste and serve hot.

    made it twice now, I used a bit less liquid as I like it thicker, sooooo good. Going to try the Thai version now 😁
