Vanilla bean paste is a really important pantry staple in my house. This recipe first appeared in my ebook calendar How To mix. It is important you get really good quality vanilla beans and I tend to use the madagascan vanilla beans in gourmet quality that I buy online. They are really fresh and squishy which tells me they are super fresh. This Thermomix recipe is so easy to prepare and if you find that you need more water, simply add it halfway through the recipe. Sometimes, depending on the type of sugar you used, you might need to add a little more.

Ingredients

  • 15 vanilla beans cut in 1cm long strips
  • 400 g brown sugar or raw sugar
  • 20 g glucose syrup
  • 200 g water
  • 1 pinch sea salt flakes

Instructions

  1. Place the vanilla beans and sugar in the mixing bowl then blitz 1 Min. / Speed 10. Scrape down using spatula.

  2. Add the glucose syrup, water and salt then cook 10 Min. / 100°C / Speed 2. Meanwhile, sterilise a large jar and set aside.

  3. Once cooked, pour the vanilla bean paste into the prepared jar and seal tight. Store in the fridge for up to one year.

Thanks for the recipe! Do you think one can make a half recipe?

Absolutely. Reduce the cooking time by 1.5 minutes.

Thank you for this recipe Sophia. I have made vanilla bean paste in the past and stored it in the fridge and after a month it went mouldy so had to throw it out, which was very costly when I used 20 vanilla beans! I have done some research recently and the consensus seems to be not to store vanilla bean paste in the fridge and rather store it in a dark, cool place in the pantry. Have you ever tried this?

Also, with your recipe, could I substitute the water with my own homemade vanilla bean extract (vanilla beans + vodka)? I really wanted a recipe with alcohol in it so it preserves the beans and protects from spoilage.

    Many thanks, Kristen
