
Banana Bread Muffins
Banana Bread is one of those delightful snacks you can have for breakfast, as a snack in between meals, for afternoon tea or just at any time of the day really. Jesse is a huge fan of banana bread and I thought rather than making a loaf, this time I am going to try a muffin version. They are absolutely delicious. What's even better, if you are taking them as a packed lunch or making them for the kids, they are portable and perfect portion sizes. It's one of the easiest and fastest Thermomix recipes and will leave you feeling super happy and full.
You could also make this as a loaf, simply use a 2lb loaf tin, grease with butter and bake the mixture for 60 minutes instead. You could also add up to 100g chopped walnuts or any other nuts of your choice. They go really well.
Ingredients
- 3 ripe bananas
- 125 g unsalted butter in small chunks
- 175 g coconut sugar or demerara sugar
- 1 tsp vanilla bean paste
- 2 large eggs
- 260 g plain flour
- 1 tsp baking powder
- 1 level tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 120 g golden syrup
- 1 banana sliced diagonally in 12 pieces
Instructions

Preheat the oven to 180C / 160C Fan / Gas Mark 4. Place 12 tall muffin cases in a 12-hole muffin tin and set aside. Alternatively, you can bake the muffins in small cases, it will make 24 muffins.

Place the bananas in the mixing bowl. Combine 10 Sec. / Speed 5. Add the butter and combine 20 Sec. / Speed 5.

Add the coconut sugar, vanilla bean paste, eggs, plain flour, baking powder, bicarbonate of soda, ground cinnamon and golden syrup and combine 20 Sec. / Speed 4.

Distribute the mixture evenly between the muffin cases and decorate each with a banana piece. Bake for 20-25 minutes until a skewer inserted comes out clean. Leave to cool slightly before serving. They are best served slightly warm.

Will it be too sweet to have sugar and golden syrup? If I need to cut down sugar content, do I reduce sugar or golden syrup?
I thought it was just perfect 🙂 You could definitely reduce golden syrup and it will still come out amazing.
Mine are currently in the oven! Sophia have you tried with maple syrup instead of golden syrup?

Made these but replaced golden syrup with honey at half the weight n added crumble toppings 😋
Can I freeze these once they are cooked and then just defrost and warm slightly when i need to use them
