Chocolate Guinness Cake
I still cannot get over how fluffy this chocolate Guinness cake is. Perfect for St. Patrick's day this is the best cake to celebrate with the whole family. If you have kids in the house and are worried about the alcohol you can easily use Coca Cola instead to get a similar flavour. This is one of those Thermomix recipes that you can prepare in no time and the wonderful malty aromas are so amazing you will want to go back for more. The Guinness enriches the chocolate flavour and creates a moist and fluffy cake with a simple and easy cream cheese frosting.
- 125 g unsalted butter in small chunks
- 110 g Guinness or Coca-Cola
- 40 g cocoa powder
- 200 g light soft brown sugar or coconut sugar
- 100 g whole milk
- 2 large eggs
- 180 g plain flour
- 1 level tsp bicarbonate of soda
Cream Cheese Frosting
- 100 g unsalted butter in small chunks
- 200 g icing sugar
- 100 g cream cheese
- 1/2 tsp vanilla bean paste
- 50 g dark chocolate shavings
Place the butter in the mixing bowl. Combine 20 Sec. / Speed 5.
Add the Guinness, cocoa powder, sugar, milk, eggs, plain flour and bicarbonate of soda. Combine 20 Sec. / Speed 5. If the mixture is not fully incorporated, scrape with a spatula and repeat 10 Sec. / Speed 5. It is important not to over mix the cake batter because it will loose its fluffiness.
Pour the batter in the prepared tin and bake for 45-50 minutes until a skewer inserted comes out clean. Remove from the oven, leave to cool for 5 minutes in the tin, then release and place on a wire cooling rack to cool entirely.
Meanwhile, clean the mixing bowl. For the cream cheese frosting, place the butter in the mixing bowl. Combine 20 Sec. / Speed 5. Insert the butterfly whisk attachment. Add the icing sugar, cream cheese and vanilla bean paste. Whisk 20 Sec. / Speed 3.5.
Spread the frosting over the cooled cake and serve with a few shavings of chocolate if you like. You can refrigerate the cake for up to 3 days but I doubt it will last that long.
