Thermomix Apple Pie

Thermomix Apple Pie is a special dish that rounds off a really nice meal. This recipe is ideal for the whole family and super to easy to make. When it comes to Apple pie, there is clearly a divide between the people who like chunky apple slices and those who prefer a creamy Apple mash inside the pie. I am a huge fan of the creamy mash and this recipe works fantastically to create an incredible crust. Apple pie is one of those special dishes that rounds off a really nice meal. It's food for the whole family and definitely leaves everyone very happy and full. Jesse loves Apple pie so much, the last time I made it, he said he could have Apple all day long, even for breakfast. Whatever suits your needs. This Thermomix Apple Pie is one of a kind. The filling is made with mashed apples and the crust creates this wonderful balance between soft filling and crunchy pastry. The shortcrust pastry is very easy to make in the Thermomix and tastes deliciously buttery and soft. The egg brush gives it a golden finish when baked. What is your favourite apple pie? Apple Pie:

  • 225 g butter at room temperature
  • 50 g caster sugar
  • 1 egg 1 egg yolk
  • 350 g plain flour


  • 1 kg Braeburn apples
  • 140 g caster sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons plain flour
  • 1 teaspoon corn flour

Egg Brush:

  • 1 egg white leftover from the pastry


  1. Preheat your oven to 190°C.
  2. Place all the pastry ingredients in the Thermomix mixing bowl and knead until you have a smooth dough on setting 45 Sec./ Dough mode.
  3. If you don't have a Thermomix, place all the ingredients in a large mixing bowl and knead until you have a dough ball.
  4. Wrap the dough in cling film and place in the fridge until later.
  5. For the filling, peel, core and quarter the apples. Place all the filling ingredients in the Thermomix mixing bowl and shred until you have a coarse mixture on setting 2 Sec./Speed 4.
  6. If you don't have a Thermomix, place the filling ingredients in a food processor and shred into a coarse mixture.
  7. Take the pastry and cut off a third. Take the remaining 2/3rds and roll out to line your buttered pastry dish. Leave enough to slightly overlap the edges. Place the filing in the pastry lined pie dish. Now roll out the remaining pastry to make the lid. Place on top of the filling and press the edges together to seal it. Cut a few steam holes in the pastry and use any leftover pastry to decorate your pie.
  8. Brush the pie with the egg white and place in the oven for 45 minutes until baked. Serve warm with vanilla ice cream!
