Sophia's Chocolate Brownies

Does anything even need to be said? There's nothing quite as classic as a chocolate brownie, and this is my go-to brownie recipe. They're fudgy and oh-so-chocolatey - and they're gluten free!

I love the addition of pecan nuts in my brownies for a lovely nutty texture and a nice crunch, but you can play around with different flavours - how about chilli flakes, or dried sour cherries... or what about some extra chocolate chunks? I'm not judging!

Ingredients

  • 200 g dark chocolate in chunks
  • 100 g unsalted butter in chunks
  • 250 g caster sugar
  • 4 large eggs
  • 100 g ground almonds or gluten free plain flour if you're allergic to nuts
  • 1 level tsp baking powder
  • 30 g cocoa powder
  • 100 g toasted pecan nuts optional
  • 1 pinch sea salt flakes

Instructions

  1. Preheat the oven to 180°C / 160°C Fan / Gas Mark 4.

  2. Place the chocolate in the mixing bowl and chop 5 Sec. / Speed 9. Scrape down using a spatula.

  3. Add the butter and melt 3 Min. / 60°C / Speed 3.

  4. Add the sugar, eggs, ground almonds, baking powder, cocoa powder, and all but one tbsp of the pecan nuts (if using) and combine 20 Sec. / Speed 4.

  5. Pour the mixture into a 20cm square cake tin lined with either my small silicone baking mat or greaseproof paper and decorate with the remaining pecan nuts (if using). Sprinkle over the sea salt.

  6. Bake for 25-30 minutes until the top has just cracked and it appears nearly set but ever so slightly wobbly to the touch.

  7. Remove from the oven and leave to cool completely. Before you cut it up into squares, my trick is to refrigerate the brownies to firm up to make it easier to get neat slices. Remove the brownies from the baking tin and silicone baking mat before cutting.

  8. Store in an airtight container for up to 1 week... like that's going to happen!

    I have been making brownies for years using my Kitchenaid mixer. I switch to baking with Thermomix and I LOVE this recipe. So moist and the sweetness is just right. I don’t use my old recipe anymore. This one is a keeper. Thanks Sophia!!!!

    Hi Sophie, these look fantastic and definitely would love to try them. Just wondering with the almonds is there a way you can ground them in the thermo? If so what’s the process in doing this?
