Tomato & Smoked Garlic Relish

I am obsessed with relish. I use it to spice up just about anything: sandwiches, roast veggies, meat, warm salads - you name it! It adds such a complex flavour and brings a whole new element to foods. The flavours in this relish are so beautiful and rich thanks to the smoked garlic and tomatoes, and roasting the vegetables at the start really makes their flavours pop. Once you taste this relish you'll want to add it to everything!

Ingredients

  • 100 g caster sugar
  • 1 kg tomatoes halved
  • 1 red pepper in large chunks
  • 2 large onions halved
  • 30 g olive oil
  • 100 g sun blushed or sundried tomatoes in oil
  • 1 tbsp paprika powder
  • ½ tsp smoked paprika powder
  • 1 tsp ground coriander
  • 1 heaped tsp salt
  • 200 g red wine vinegar
  • 100 g soft brown sugar
  • 4 smoked garlic cloves
  • 1 tsp mustard seeds

Instructions

  1. Preheat the oven to the highest grill setting. Line a large baking tray with greaseproof paper and sprinkle with the caster sugar.

  2. Add the tomato halves to the baking tray facing cut side down. Add the pepper chunks skin side up. Roast for 10 minutes under the grill until you see black spots on the skin. Remove and set aside.

  3. Meanwhile, place onions in the mixing bowl. Chop 3 Sec / Speed 5. Add the oil and fry 10 Min / 100°C / Speed 1.

  4. Add the roasted tomatoes and peppers, sun blushed tomatoes, paprika powders, coriander, salt, vinegar, sugar, garlic cloves and mustard seeds and chop 3 Sec / Speed 5. Then cook 60 Min / Varoma / Speed 1 / No Measuring Cup. Instead use either the simmering basket on top of the lid or the TM6 splash guard.

  5. Check the consistency and cook again 30 Min / Varoma / Speed 1 / No Measuring Cup. Instead use either the simmering basket on top of the lid or the TM6 splash guard. After 1 ½ hours it should be perfectly cooked, if you still find it too runny, simply add on another 20-45 minutes. Don't let it cook too sweet and reduce too much, as it won't be very chutney- and relish-like, and more like a jam.

  6. Fill into sterilised jars, using the lid as a funnel and leave to cool. Store in a cool place for up to 1 month.
