
Hot Cross Bun Brownies
Easter is all about indulgence. And hot cross buns. And chocolate. So naturally, this hot cross buns brownie recipe is something I needed to share with you. If you have any leftover hot cross buns this is the best way to use them up and create even more indulgence. If you don't have any leftover hot cross buns, this is a s super easy Thermomix recipe for the perfect brownies and you could just add in some raisins and make it super tasty.
Ingredients
- 320 g dark chocolate in small pieces
- 175 g unsalted butter in small chunks
- 80 g golden syrup
- 275 g light soft brown sugar or caster sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 4 large eggs
- 70 g plain flour or gluten free plain flour
- 2 hot cross buns torn into small pieces
Instructions

Preheat the oven to 180C / 160C / Gas Mark 4. Line a 20cm square cake tin with greaseproof paper and set aside.

Place the chocolate in the mixing bowl. Chop 5 Sec. / Speed 9. Transfer into a bowl and set aside.

Place the butter, golden syrup and brown sugar in the mixing bowl. Melt 2 Min. / 100C / Speed 2. Add the chocolate and mix 1 Min. / Speed 3.

Add the ground cinnamon, nutmeg, eggs and plain flour. Combine 20 Sec. / Speed 4. Pour the mixture into the prepared tin, decorate the hot cross bun pieces on top and leave the mixture to stand for 15 minutes.

Bake in the oven for 35 minutes. The mixture should not be fully set, you don't want hard brownies, you want them nice and gooey. Remove from the oven and leave to cool. Refrigerate overnight and slice up the next day.
