Hot Cross Bunnies

Step aside, regular old hot cross buns - these Hot Cross Bunnies are the cutest buns to bake this Easter! They may look a little complex to put together, but trust me - all it takes are a couple of snips with some scissors and a bit of creativity and you'll have the perfect little bunnies.

These buns are topped off with some oozy apricot jam glaze for a bit of extra decadence! Yum!

Ingredients

For the bunnies:

  • 250 g whole milk
  • 1 tbsp dry active yeast
  • 60 g light brown sugar
  • 60 g butter
  • 1 egg
  • 500 g plain flour
  • 1 pinch sea salt
  • 1 tsp mixed spice (allspice, cloves and cinnamon)
  • 150 g sultanas

For the faces:

  • 4 tbsp plain flour
  • 3 tbsp water
  • 24 sultanas

For the glaze:

  • 50 g apricot jam

Instructions

  1. Place the milk, yeast, and light brown sugar in the mixing bowl. Warm 2 Min / 37°C / Speed 2.

  2. Add the butter, egg, plain flour, mixed spice, salt and sultanas. Knead 2 Min / Kneading function.

  3. Leave to rise until doubled in size for an hour. Then remove the dough and place on a floured surface.

  4. Cut into 12 individual buns and shape them into ovals. Place them on a baking tray lined with greaseproof paper and use scissors to cut into the top third. Spread the two cute apart, these will form the bunny ears. Cover and leave to rise for another 30 minutes.

  5. Meanwhile, preheat the oven to 200°C / 180°C Fan / Gas Mark 6.

  6. To make the flour paste, place the flour and water in the mixing bowl and stir 10 Sec / Speed 2. Scrape down and repeat again 10 Sec / Speed 2.

  7. Fill into a piping bag with a plain nozzle and pipe little bunny faces over the uncovered buns. Decorate the eyes with some sultanas.

  8. Bake in the oven for 15-20 minutes. Then, remove from the oven and make the apricot glaze.

  9. Place the apricot jam in the bowl and melt 2 Min / 90°C / Speed 1.

  10. Using a brush, glaze the buns with the melted apricot jam immediately. Enjoy!
