Mexican Bean Quesadillas

In search of a fun, quick and easy weeknight dinner that the whole family will love? Look no further than these amazing Mexican Bean Quesadillas. They're totally delicious, and the filling smells absolutely amazing while it cooks, so it's just as well you don't have to wait long to eat the final product! They really couldn't be easier thanks to the Thermomix, meaning you'll have dinner prepared and on the table in 20 minutes flat.

Ingredients

  • 100 g mature cheddar in pieces
  • 4 spring onions in large chunks
  • 30 g olive oil
  • 2 tins kidney beans drained
  • 1 heaped tsp ground cumin
  • 1 heaped tsp smoked paprika
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 80 g fresh baby spinach (or frozen and thawed)
  • 6 large flour tortillas

Instructions

  1. Place the cheddar in the mixing bowl. Chop 5 Sec / speed 7. Remove and transfer into a small bowl. Set aside until later.

  2. Place the spring onions in the mixing bowl. Chop 2 Sec / Speed 7. Add the olive oil and fry 3 Min / 100°C / Speed 1. Add the kidney beans, cumin, smoked paprika, salt, pepper and spinach and cook 5 Min / 100°C / Reverse Speed 1.

  3. Place 3 tortillas on a chopping board. Divide the mixture over the tortillas and spread evenly, leaving a 1cm border. Sprinkle over the cheese and top each tortilla with another one. Press down slightly and either cut into wedges or leave whole for frying depending on the size of your frying pan.

  4. Heat a non stick frying pan to medium heat and fry each quesadilla for about 2 minutes on each side. Serve with guacamole and salad.

    Really delicious. I used one tin of black beans and one tin of kidney beans. I also used my sandwich press/grill and it worked really well. Served with guacamole and sour cream. A fresh tomato salsa would also be delicious.
